Cinco de Mayo

While chowing down on some Mexican foods in celebration of Cinco de Mayo, you'll want to grab a cookie to supplement; remember, have to have your salts and sweets! Then you'll have a perfect combo.
Carnie’s Pico de Gallo
6 Roma
tomatoes, diced
1/2 cup finely diced
white onion
1 lg seeded Jalapeño
pepper, chopped
Juice of one big
lime
1 teaspoon sea
salt
1/4 teaspoon
black pepper
1/8 cup minced
fresh cilantro

Mix all ingredients in a bowl and stir well. Add more lime and salt if you desire!!!!
Carnie’s Guacamole
4 lg ripe avocados,
pits removed
1/2 cup minced
white onion
1 large garlic clove,
minced
 1 cup diced Roma
tomatoes, seeds
removed
Juice of 1 large lime
or two small
1 large jalapeño pepper,
finely chopped
( if you like spicy leave seeds and
membrane- if not, remove)
1/8 cup finely
chopped cilantro
(optional)
Dash Lawry’s
1 1/2 teaspoon sea
or kosher salt
Pepper to taste

Scoop out the avocados with a spoon into a big bowl.
Cut with a fork and knife until you have large irregular chucks. Add all your other ingredients and adjust salt and lime if necessary. Stir to combine gently - leaving chunky or stir more to make creamier. Both genius.
